Inspiration Behind Our Menu Items

We’d be willing to bet that you’ve wondered once or twice how some of our menu items get their names, so we’re here to tell the story behind one of our most popular sandwiches.

The Henrietta Grilled Chicken Panini is a crowd favorite, and how can it not be with its juicy grilled chicken, bacon jam, and bbq hickory Dijon sauce? What you probably don’t know, however, is that this sandwich is named after someone incredibly special to our owner, Gail Smith.

Henrietta Bollock, or Aunt Hank as they called her, was an extraordinary member of Gail’s family. When it came time to begin brainstorming on the new menu, Gail and Chef Troy knew this sandwich needed to have its rightful place. But something felt like it was missing with this particular one. It deserved a special name, one that would help it stand out amongst the others. As a sandwich that’s full of surprises, a bit sassy, and incredibly comforting, one thing came to mind; Aunt Hank. What makes this even more fitting is the popularity of naming chickens Henrietta (aka, Hen).

It simply felt right and naming a popular sandwich after a beloved family member was a special and unique way to pay respect to Gail’s love of family. So, the next time you order the Henrietta Grilled Chicken Panini, we hope you’ll think of Aunt Hank and all of the members of your own family who have given you fond memories over the years!
